We’re not leaving anything to chance on the cusp of New Year’s Eve, so much so that we’ve brought together nearly every sparkling wine style in the world for you to make the year end, a proper party. Here’s the ultimate cache of sparkling wines you’ll ever need to make this party one for the bubbling ages. Cheers!

Champagne

Champagne Billecart-Salmon, Brut Reserve NV
A far out first among equals, Champagne is undeniably the world’s premier sparkling wine style. Its inventions is the stuff of legends and has, over centuries quenched the thirst of royalty, billionaires and today the world large. The world’s most famous blend of red and white Burgundian grapes undergoes the sacred Methode Champenoise process to become Champagne. Another first among equals in the Champagne region is Billecart Salmon, steeped in two hundred years of Champagne making and access to grapes from 40 crus. The house’s classic expression crackles with notes of citrus, apricots and a touch of biscuit, buoyed by creamy texture.

Cava

Cava is a Spanish sparkling phenomenon that today rages across the world, winning over more enthusiasts every day. Produced exclusively in the Catalunya region, Cava is a blend of three three indigenous grapes (Parellada, Macabeo and Xarel-lo) and uses the same production method as Champagne. Gramona is a celebrated traditional Catalunya house that sets the standards for Cava with this fantastic vintage turn, produced biodynamically. In fact the name pays tribute to Aliances per la Terra collective, a Biodynamic producer association. Bottle aged for 24 months on the less, this premium Cavas impresses with apple, citrus and hint of almonds and bready texture, lifted by an abundance of bubbles.

Prosecco

The Italians are not ones to be left behind or be simply content with importing Champagne. Their proud and crafty winemakers up in Veneto make the Prosecco which has become virtually the right of passage for anyone wanting to fall in love with sparkling wines. Made from the indigenous Glera grape using the distinct Charmat method which involves second fermentation in the bottle, Prosecco is, today, a popular top of mind bubbly. The family estate of Bisol boasts 500 years of winemaking tradition and a decidedly modern and natural approach towards its Prosecco styles and its signature expression abounds with citrus and apple tempered by minerality, making for the perfect afternoon aperitif.

Moscato D’asti

This light sparkler is produced in Italy’s Piedmont region, an out and out red wine heartland best known for Barolo and Barbaresco. A subtly sweet foil to the intense local reds, this wine is made from Muscat Blanc grape that makes sweet and fruity wines. This bubbly Peidmontese surprise is a pleasing summery sparkler a hue of pale sunshine with tones of fresh apricots and peaches underscored by a hint of sweetness.
Famille Fabre, Instant Bulle Pet Nat, 2024
The French aren’t just content with Champagne, they’ve got more sparkling surprises in their cellar and Pet Nat is top of that list. Pet Nat, short for Pétillant Naturel is made in the South of France using the Méthode Ancestrale (ancestral method) and has got bubbles, a cloudy character and a riveting story to tell Famille Fabre tells it best with its fab Pet Nat wines from the southern French region of Languedoc. The unique production method leaves a bit of cloud and yeast in the bottle which makes things a little interesting and ultimately a delicious bubbly that dazzles the palate with lime, pear and almonds atop refreshing texture.
Man Family Wines, Sparkling Chenin Blanc 2024
Hey, it isn’t just the old world bastions that own the bubbly. The New World’s got them bubbles too and some surprisingly imaginative styles that marry creativity and proper tradition. A superlative example of New World potential is Man Family’s wholesome vintage sparkler that makes Chenin Blanc the crackling star. Head winemaker Riaan Möller uses the Méthode Cap Classique process (same as Champagne, different name), nailing the style by balancing pure bubbling exuberance with a spray of flavours like lime, apple and pear, cradled by zesty texture. This vintage Chenin Blanc sparkler is one to put the feet up with and get the party started.
